Hydrolats are fragrant plant waters left over from the distillation of essential oils. Hydrolat contains the properties and fragrance of the distilled plant.
During distillation, the plant or flower is steamed to extract the essential oil. The passing steam takes with it some of the plant's properties and fragrances. When the steam returns to water form, it becomes hydrolate.
