Hydrolate is fragrant plant water that is left over from the distillation of essential oils. Hydrolate contains the properties and fragrance of the distilled plant.
In distillation, the plant or flower is steamed to extract the essential oil. The steam that passes through takes with it parts of the plant's properties and fragrances. When the steam returns to the waterform, it becomes hydrolate.
